  16. 2 1/2 tazas caldo de res

  1. En un bol o plato hondo combinar el rabo ( separados) junto con aceite de oliva, 1/2 taza de vino de cocina y 1 cdta. de sal.
  2. Déjelo reposar en la heladera un minino de 8 horas o hasta al día siguiente.
  3. Al cabo de este tiempo, transfiera el rabo a otro plato ( sin el aderezo).
  4. En una olla caliente un poquito de aceite y levemente dore los pedazos del rabo. * Retire el rabo y agregue las cebollas, pimientos ( ajíes), zanahoria y papas.
  5. Sofría hasta que las cebollas estén translucidas.
  6. Agregue la mezcla del ajo/sal y continúe sofriendo por 1 minuto.
  7. Agregue el resto de los ingredientes incluyendo el rabo.
  8. Cuando llegue al hervor, baje el fuego, tape y cocine a fuego bajito por unas 2 horas o hasta que la carne este tierna.
  9. Retire las hojas de laurel y sirva encima de arroz blanco.
