  2. A la vez licuamos en el caldo de res, la zanahoria y el apio. El licuado lo vaciamos sobre la carne sofrita, adentro la leche e integramos todo unos segundo, rectificamos sal y tapamos a fuego medio alto y le damos 15 minutos después del primer pitido de presión.
  3. Este es el momento en el que el agua para sancochar la pasta rompe hervor, agregamos la sal y esperamos 1 minuto a que vuelva el hervor. Agregamos la pasta y cocemos unos 12 minutos aprox, en realidad hasta que esté al dente.
  4. Una vez cumpla el tiempo llevamos la olla a un bol con agua y hielo, esto bajará temperatura y presión, Una vez la válvula este sin presión podemos abrirla. A la vez debemos tener los espaguetis al dente, los escurrimos y servimos inmediatamente con su porción de salsa encima.
  5. Puedes rayarle parmesano reggiano a tu gusto. Yo reservo un poco de perejil lo pico y roció sobre el plato para darle color.
