- Una vez doramos la carne, agregamos el tomate y el agua, tapamos y dejamos cocer por 1:25 hora a fuego medio bajo, un hervido muy lento. Luego de la hora checamos la carne debe estar a medio camino de cocción, entonces agregamos las papas, zanahoria, en este punto agregamos el caldo asegurándonos que este quede 2 dedos por encima de los ingredientes y tapamos para una cocción lenta de 30 minutos. En este punto agregamos las habichuelas y tapamos 15 a 20 minutos más.
- Opcional: Puedes dorar las habichuelas con mantequilla antes de agregarlas a las salsa, lo que mejora el sabor y su textura.
- Así debe verse el caldo reducido a salsa con los ingredientes cocidos, esto lo servimos con arroz blanco o va muy bien con un buen pan. Si lo prefieres con pan, te recomiendo que cambies el caldo a 2 tazas más 1 taza de vino tinto, modificamos el sabor y armoniza mejor con el pan. Y si le pones mantequilla a la miga del pan Diooooooos! una locura.
