- 2 aguacates cortados en julianas o en guacamole
- 1/2 taza cebolla blanca finamente picada
- 1/2 taza cilantro picado
- 1 manojo derabanos, desinfectados y cortados a tu gusto
- 1 manojo cebollas cambray (asadas)

- En una sartén calienta un poco de aceite y fríe muy bien el tocino hasta que quede crujiente y volteando constantemente para evitar que se queme. Retira, escurre sobre un papel absorbente y reserva.
- Esa misma grasa del tocino, vacíala en la olla profunda donde comenzaras a cocinar el caldo, y una vez engrasada la olla comienza a freír la carne. - Después, cuela y vierte sobre la olla donde esta la carne y agrega suficiente agua para cubrirla. Incorpora el cubo sazonador. Tapa la olla y cocina a presión con flama media, y baja cuando comience a subir la presión. A partir de que la tapaste 30 minutos. si no utilizas olla de presión , entonces baja el fuego hasta que la carne este suave.
- Una vez lista la carne comprueba su sabor y agrega mas sal si es necesario, recuerda que la grasa del tocino es salada.
- sirve bien caliente y añade sobre el caldo tocino que reservaste, cebolla y cilantro al gusto.
- Puedes agregarle los frijoles(sin caldo) a tu carne en su jugo o bien servir aparte frijoles refritos. Acompaña con cebolla cambray, rábanos. Como complemento se puede servir aparte guacamole con totopos, o bien tiras de aguacate, y una salsa de tomate picante.
